Abstract

Several fungi were isolated from infected olive fruits. The isolates fell into seven genera Aspergillus, Cladosporium, Penicillium, Phoma, Rhizoctonia, Rhizopus, Stemphyliwn. The efficiency of these isolates to produce lipase's. was tested on solid media containing Tween '80 or Tributyrin, Similar results were obtained from both tests. Isolates of the species Aspergillus niger gave the highest production of the enzyme.
